Happy Anniversary

Today is our 4 year anniversary!! Derek said this morning that it may be only 4 years, but it feels like 40. It all started back in 2000 after meeting in high school our senior year. Derek came up to me one day in the hallway and asked me out for coffee. I said, "I don't drink coffee." He said, "I don't either....how about some apple juice?" So anyway, the rest is history I guess. I won't embarass Derek with the story of our 2nd date! I'll just say that after that date he got the nickname "Bad Boy" from my family! Looking back we've had a lot of ups and downs......mostly ups. We've traveled all across the country and experienced a lot of fun and exciting things. We have a beautiful daughter that we love more than anything and another precious child on the way. We are greatly blessed and forever thankful for all of the love and support we get from family and friends.

Memorial Day Weekend

What a fun and busy weekend we had! It started off w/ Uncle Buddy and Aunt Kim arriving Friday night followed by Uncle Kevin, Aunt Tami and cousin Abby. Allie was so excited to see everyone! She really enjoyed having Abby around and quickly got attached to her. After all of our visiting we had an extremely late dinner of hamburgers and hot dogs on the grill. Then the little ones were off to bed so the rest of us had a ping pong tournament and played Mario Kart and Dr Mario. The next morning Bryan and Kim were off to Cleveland to see a Kenny Chesney concert. It was sad to see them leave so soon, but we know they had a blast at the concert! The rest of the weekend was so busy that I'll just sum it up in a few words and pictures: the LAKE, waverunners, bike rides, CANOE trip, croquet, Fill or Bust, frisbee golf............

What's Cooking........WEDNESDAY

Tonight was one of our family favorites.....Chicken & Noodles, Mashed Potatoes and Corn. We absolutely love it! I know that most of our blog readers already know the recipe, but I will go ahead and post how I cook it. The crazy thing is, it's so common to us because we grew up with it. My Mom and Dad fixed it for us all the time and Grandma would always fix it for our holiday dinners. But....Derek and I have learned that a lot of people don't know what it is or have never had it before. We've had plenty of people (from different parts of the country) over for dinner to have Chicken and Noodles and they've said it's their first time having it. Maybe it's a Midwest thing?

Anyway here's how we do it:

Chicken & Noodles
1. Cook chicken in crock pot
- cover in water (I add chicken bouillon, fresh chopped garlic, onion powder and pepper)
2. Bring 3 small cans of chicken broth (along with juice from crock pot) to a boil and cook 1 package of egg noodles in it
3. Meanwhile start mashed potatoes and corn
4. Shred chicken and add to noodles (keep cooking until most of the liquid is gone)
5. Eat and Enjoy! (we like to mix it all together!!)

The Itch, Farm Babies Fest & Waterfalls....Oh My!

What a busy weekend we've had so far! The rain has decided to hold off so we took advantage of it. Derek has been itching to take his wave runners out ever since he bought them.......and so that is just what we did on Friday afternoon. Yes, the water was freezing.....no, I didn't get on them. It was funny because Derek was so excited and he took off and shouted "whooo hoooo" thinking that no one would be able to hear, but oh no........EVERYONE heard!!

Today we headed out to Dayton to the Aullwood Audubon Farm for Farm Babies Fest. There was a tent set up with Children's Activities as soon as we walked in and so Allie made herself a pig hat and a sheep necklace! Then we were off to see the animals.....sheep, chicken, rabbits, cows.......and we saw a comedian/singer that sang about the animals.

Then we headed to a nearby park and had a picnic and hiked a few trails to some waterfalls.


Now that's exhausting!!!!!!

What's Cooking.....WEDNESDAY

Today has been a blah day.....raining (and supposed to rain for the next 10 days). Allie wasn't feeling very well and Derek and I were just lazy. So I thought I'd go ahead and start posting what we cook for dinner on Wednesdays and post the recipe. Today we had Stuffed Chicken Rolls, it's a recipe from Kraft.



What you need:
1 pkg Stove Top Stuffing Mix for chicken
2 eggs, lightly beaten
6 small boneless chicken breast halves (I only used 3)
- pound to 1/4 inch thickness
1 can condensed cream of chicken soup
1/2 c. milk
1 tsp. paprika


Directions:
1. Combine stuffing mix and 1 cup water. Let stand for 5 min.
Stir in eggs. Spread mixture over chicken. Roll chicken to enclose mixture.
2. Place chicken rolls, seam down, in 13x9 inch baking dish.
Mix soup and milk; pour over chicken. Sprinkle w/ paprika.
(I put leftover stuffing in with the chicken as well)
3. Bake @ 400 F for 30 min

She's a potty girl

Ok, so Allie went potty today on the big girl potty (sort of). We rewarded her with a sticker and she wanted to sing and dance to celebrate. So we sang "Celebrate Allie, Potty!" and "She's a Potty Girl, Allie's a Potty Girl." This went on for at least 20 minutes........she was so excited!


In other news, I had a good Mother's Day......although I missed my Mommy. I'm glad my brother is still close to keep her company! Allie and Derek got me a sweet card and some pretty flowers. Then Allie came out of nursery at church w/ another flower for me and a picture that she drew.........I loved it!!! She's so sweet.....and she was so excited to give it to me.


Derek's Mom and Dad came for a visit.........they got here Sunday night. It was great to see them and I know they were anxious to see Allie too. Allie sure loved having them here! We were able to take them out to dinner for a belated Mothers Day on Monday after spending the afternoon at the United States Air Force Museum.
